What it is: A young, spring onion in the allium family.

How to use scallions:

  • Raw or cooked.
  • Sliced and added to salads or grain bowls.
  • Chopped and added to a sauté.
  • Sliced thinly and sprinkled on avocado or other savory toast.
  • As a garnish for soups and eggs.

Why scallions are good for you: Scallions are a good source of Vitamin K, C, A and B vitamins.
